My Kitchenware Essentials List
I am often asked which tools of the trade home cooks should have in their kitchens. Although I probably have far too many pieces of equipment in my kitchen, the list below features the tried and true items I reach for over and over again.
I recommend purchasing the best quality you can, which does not necessarily mean the most expensive. I shop for deals whenever possible! Before making a purchase, take a few minutes to research recommendations. Cooks Illustrated, Consumer Reports and some of the food websites (Food & Wine, The Kitchn, etc.) do a good job of testing and reviewing all sorts of kitchen equipment and are good resources. Next, consider the following:
- how you will use the equipment and if it provides for more than one application (such as a Dutch oven)
- its weight and feel (such as a knife or fry pan handle in your hand)
- where you will store it
- the quality of materials and construction
- ease of cleaning
With careful purchasing, these pieces will serve you well for many, many years!

MY KITCHENWARE ESSENTIALS LIST
Pots and Pans
- 2 Fry pans (different sizes; 1 stainless and 1 hard anodized)
- Stock pot with cover (stainless)
- 2 Saucepans with covers (different sizes; stainless)
- Saute pan with sides and cover (stainless)
- Wok
Dutch Oven (enameled cast iron or a lighter weight version)
Ceramic Baking or Casserole Dish
Knife Set with Steel and Kitchen Scissors
- 8” chef’s knife, slicing knife, and paring knife are most useful; I recommend Victorinox, Wustof, and Shun
Nesting Mixing Bowls
Measuring Cups and Spoons
Cutting Boards
- wood for veggies, fruit, any non-meat or seafood item
- acrylic for meat and seafood
Utensils
- tongs
- whisk
- wooden spoons
- ladle
- metal spatula
- silicone spatula
- peeler
- microplane / grater
- thermometer
- silicone pastry brush
Can opener (smooth edge)
